Bergamot is a type of bitter orange with greenish-yellow peel. The pulp is very acidic, so the fruit is grown primarily for extraction of the essential oil from the peel. Since the sixteenth century, bergamot oil has been used in perfume formulations. The refreshing and strong citrus aroma is also used as a flavoring for earlgrey tea.
