What is coconut blossom sugar?

Coconut blossom sugar is a sugar extracted from the pristine blossom of the coconut palm. The nectar of the tropical coconut blossom is harvested by tappers high in the tree. Once the tappers have gathered enough, the pure nectar is boiled down very slowly in a cauldron to an unrefined sugar.
