Chicory is a biennial plant. In the first year, the root grows and the plant establishes a large energy reserve to form beautiful, blue-purple flowers the second year. That reserve is inulin, also called chicory root fiber. For the plant this is a source of energy, for us a 100% vegetable fiber.


Usage and storage
Dried chicory root fiber has a sweet, slightly bitter taste and can be added to yogurt, granola, salad, soup or a sauce.
